This started with
my husband's diagnosis.
Luke is a firefighter. His whole identity was built around physical strength — showing up, being capable, being the person other people could rely on. For years, his symptoms were dismissed. Anxiety, they said. Eat slower. He was sent away with acid reflux medication that didn't help and a shrug from every specialist who didn't quite know what to do with him. When we finally got the EoE diagnosis, we felt relief for about five minutes — and then absolute terror. Because the diagnosis came with almost no guidance. No dietary plan. No explanation of what had been happening to his oesophagus or why. Just a pamphlet and a follow-up appointment months away.
I remember sitting at our kitchen table at midnight, surrounded by printed research papers, trying to figure out how to feed my husband on an all-liquid diet while he navigated dysphagia so severe he couldn't swallow a soft piece of bread. I remember the isolation of that — feeling like we were completely on our own in a medical system that had already moved on to its next patient.
As a nutritionist with an MSc in Nutrition and Human Performance, I threw myself into every piece of evidence I could find. We went through the six-food elimination diet together, methodically working through each reintroduction phase to find his triggers. We learned how to nourish his body through inflammation, how to rebuild after a flare, and how to build a life around food that felt safe and even joyful again.
