I’m addicted to hummus. There. I said it. Give me some kind of veggie/protein base, mix it with some tahini and lemon juice and BAM! I’m sold. A new recipe I’m in LOVE with…Black bean hummus! It actually becomes a really beautiful dip when it is all blended together. Instead of turning super dark it takes on a purple colour. Purple protein deliciousness.
Here are some highlights about black beans…
No fat and high in protein
High in protein and fiber
Has no fat
Source of folate, copper, manganese, and vitamin B1
Now lets make some purple dip!
Black Bean Hummus

Vegan, Gluten Free
Ingredients
1 can black beans
2-4 garlic cloves
2 tbsp tahini paste (sesame seed paste)
1/4 cup olive oil
Juice from 1 lemon
2 tsp salt (or garlic salt)
1/2 tsp pepper
1 tsp cumin
Directions
Put all ingredients in a blender or food processor
Blend until smooth
If it is too thick add some more olive oil, lemon juice, or water (depending on the type of flavour you desire).
Store in a mason jar in the fridge or serve and enjoy!
Serve this with crackers or pita and cut up veggies.
Enjoy!
