Baba Ganoush with a Zing

Do you love hummus but are trying to lower your overall carb intake? Say hello to Baba Ganoush! This Mediterranean dip is made from eggplants and offers creamy goodness without unhealthy additives. Yay for being #ketofriendly. I LOVE eating it with raw veggies. It makes an excellent snack and a great quick pick me up. My recipe has apple cider vinegar in it, which gives it a special ZING to it. Try it out! It’s delicious and, as always, super nutritious.

Nutritional Values (1/4 cup)

  1. Net carbs: 4g

  2. Protein: 2g

  3. Fat: 10g

Here are some highlights about eggplant…

  1. Very low in saturated fat, cholesterol and sodium

  2. A great source of vitamin C, vitamin K, Niacin, vitamin B6, and magnesium

  3. Has lots of dietary fiber

  4. Very low in calories

Baba Ganoush with a Zing

Makes around 1 1/2 cups

Vegan, Gluten Free

Ingredients

  1. 1 roasted eggplant

  2. 3 garlic cloves

  3. 2 tbsp tahini paste (sesame seed paste)

  4. 1/4 cup olive oil

  5. 2-3 tbsp apple cider vinegar

  6. Juice of 1 lemon

  7. 1 tsp salt (or garlic salt) 

  8. 1 tsp cumin

  9. 1 tsp parsley 

Directions

  1. Roast eggplant in the oven at 350 for an hour (this may vary depending on the size of the eggplant)

  2. Put all ingredients in a blender or food processor

  3. Blend until smooth 

  4. If it is too thick add some more olive oil, lemon juice, or water (depending on the type of flavour you desire). 

  5. Store in a mason jar in the fridge or serve and enjoy!

Serve this with crackers or pita and cut up veggies. My favourite is raw sliced zucchini. Yummy!
