I’m not even kidding…Salmon is my absolute favourite food and this is the ONLY recipe I ever make. It’s my beautiful Mom’s recipe and it’s the best one I’ve ever tried. I prefer it to ever restaurant salmon I’ve ever eaten. I’m ACTUALLY being serious. It’s loaded with lemon, garlic, and healthy herbs. The key to this salmon is that you cook it to MEDIUM. I learned this key component when I worked in a restaurant. Cooking salmon to medium means that it is never overcooked. You have to try this delicious, moist, lemony fish!
Salmon is a nutrition powerhouse:
Full of healthy fat and Omega-3s
High in protein
Full of vitamins and minerals that are great for your skin, hair, bones, eyesight, heart, and more
Has cancer fighting properties
So, pretty much, we should be eating salmon. I’ve read that for beauty purposes some Victoria’s Secret Models try to increase their salmon intake before runway shows. If it’s good enough for them, it’s good enough for me!
The Best Salmon Ever
Serves 4-8 (depending on the size of the salmon)
Super Important: Only cook the salmon to MEDIUM. Overcooked salmon is the WORST! To make sure it’s not medium keep checking the fish the second time you put it in the oven (the flipped time). The top of the salmon should look cooked and the inside should be super moist and pinkish. Kind of like the medium rare look but for fish.
Ingredients
1 whole Salmon
1/2 cup olive oil
1/4 cup lemon juice
1/4 cup chopped dehydrated onions
1/4 cup dried parsley
1 tbsp garlic powder
Garlic salt to taste
Garlic pepper to taste
TRICK: Put aluminum foil on your pan BEFORE you put the salmon on it. It makes clean up SO easy!
Directions
Preheat the oven to 350 degrees
Place salmon on a pan
Mix the olive oil, lemon juice, dehydrated onions, parsley, and garlic powder in a cup or small bowl
Brush or pour HALF the herbal concoction over the salmon
Sprinkle garlic salt and garlic pepper over the salmon
Put the salmon in the oven and bake it for 15 minutes
Take the salmon out of the oven and flip it over (you may have to cut it into sections and flip over the individual sections for easier “flippage”)
Brush the remaining herbal concoction over the salmon
Sprinkle over more garlic salt and garlic pepper
Put the salmon back in the oven and cook for another 15 minutes or whenever the salmon is cooked to medium
Serve with roasted veggies and a tasty salad 🙂 Enjoy!
Budget Saving Tip: I usually cut my salmon in half and freeze one half and cook the other. One half of a salmon provides Luke and I with 4 servings (usually). I mean, sometimes I eat WAY too much and then we only get 3 servings…but you get the point 🙂
